If I recall correctly (I’m on my office Dell PC and can’t check), to make an umlaut on a Macintosh you hit option+u (option and letter u keys at the same time). Nothing will happen. If you then type a vowel, the vowel will appear with an umlaut over it.
Why “u”? I suspect it’s because in German, “u” is the letter that most often takes an umlaut. On a Mac, other diacritical marks (such as the acute accent, the circumflex, and the cedilla) are also triggered by option plus letters they normally modify in French and German. That makes them easier to remember.

The teächer explained to us how to actually pronöunce ümlauts during chörale today (We’re doing a German song right now). Guess you’re supposed to hav your mouth in an “ooooo” shape, but then pronounce whatever vowel has the umlaut.
